Add script to generate "Repo Organization" section in top-level Readme. See https://github.com/eqtylab/integrity-monorepo/blob/main/scripts/readme/update.sh.

This also involves adding Readme files for subdirs like mcp-guardian, mcp-guardian-proxy, etc with at-least an "Overview" section to populate the table.
